Enchiladas Made Easy



Some of you requested my easy Enchilada Recipe. Here it is......

12-14 white corn tortillas
1 sm can of Wolf chili no beans (I use turkey)
1/2 cup of beef broth ( I use the bullion crystals and dissolve in hot water)
Block of cheddar cheese (block - sliced)
Shredded cheddar



Mix chili and broth in a bowl to make the gravy set aside.



Warm about 3 tortillas at a time in  a paper towel in the microwave about 30 seconds to soften them.

Put slice of cheese inside the tortilla and roll up. Place in a 9 x 13 baking dish coated with cooking spray (I used a smaller pan this time and only made 9 enchiladas). Continue to roll and put in pan. Place in any direction to fit as many tortillas as possilbe.




Then pour gravy over all and sprinkle top with cheese.



Bake covered with foil. (I spray the inside with cooking spray). Bake 20 minutes in 350 degree oven. Remove and let set 10 minutes.

Easy Sticky Buns

This is my first post on my blog... :)  I found this recipe, modified it to my liking, and would like to share with you!  This has to be one of the easiest things to make, and is so delicious!

You will need:
1 can grands buttermilk biscuits 
3 Tbsp. butter or margarine, melted
1/2 C. syrup (I used pancake syrup)
1/3 C. packed brown sugar
1/2 tsp. cinnamon
1/3 C. chopped pecans, opt.
Spray a bundt (or another fluted type) pan with non-stick spray.  Combine the melted butter and syrup in a small bowl and set aside. In another bowl, combine the brown sugar, cinnamon, and nuts (if desired).  Place about half of the syrup mixture in the bottom of the pan. Then sprinkle half of the brown sugar mixture on top. Lay the biscuits on the bottom of the pan, overlapping edges to form a ring.  Top with remaining syrup and sugar mixtures.  Bake at 375 degrees for approximately 20 minutes or until golden brown.  Cool for 1 minute in the pan, then invert onto a serving platter.  I let the bundt pan sit on the serving platter for a minute or two to make sure all of the good stuff came out of the pan.  ENJOY!
